Last Minute Christmas Baking
With Christmas just days away and people flocking to the shops for those last minute gifts, avoid the crowds and gift something different (and personal) with some homemade treats.
Gingerbread men are both fun and easy, and a great activity for the kids to get involved in. Bundle a few in a cellophane bag and you'll have a great gift that your friends, family and colleagues will love! This recipe below is an office favourite!
- Gingerbread man cookie cutter
- Non-stick baking paper (no butter or greasing required!)
- 125g butter, room temperature
- 1/2 cup brown sugar, firmly packed
- 1/2 cup golden syrup
- 1 egg, separated
- 2 1/2 cups plain flour
- 1 tablespoon ground ginger
- 1 teaspoon mixed spice
- 1 teaspoon bicarb soda
- Plain flour, to dust
- 1 cup icing mixture or pure icing sugar mixed
- Green and red liquid food colouring
- M&M’s, choc bits, silver cashews to decorate
Step 1. Preheat oven to 180°C. Line 2 baking trays with non-stick baking paper.
Step 2. With an electric beater, beat the butter and brown sugar in a bowl until pale and creamy. Add the golden syrup and egg yolk and beat until combined. Mix in the flour, ginger, mixed spice and bicarb soda. Place onto a lightly floured surface and knead until smooth. Form dough into a disc. Cover with cling wrap and place in the fridge for ½ hour to rest.
Step 3. Place the dough between 2 sheets of baking paper and roll out until about 3mm thick. Use your gingerbread man cutter to cut out shapes. Place on trays with a small gap in between.
Step 4. Bake in the oven for 10 minutes or until golden. Remove from oven and allow to cool on the trays.
Step 1. Place egg white in a clean, dry bowl. Use an electric beater to beat until soft peaks form. Gradually add icing sugar and beat until stiff peaks form. Divide icing in 3 (one white, one green, one red). Add the green and red colouring and stir until combined. Cover with plastic wrap and place in the fridge to thicken for 30 mins.
Step 2. Place icing in small plastic bags. Cut a small hole in a corner of each bag. Pipe icing over gingerbread men to decorate. Finish with M&Ms, chocolate bits, silver cashews or any other decorations you like!
